Tilapia production is increasing annually. It is now one of the major species produced in aquaculture in the Philippines, (DA-BFAR 2001) as well as in region 2. Currently, tilapia is usually consumed as fresh and only small amount of the total supply is processed into different products. Employing appropriate processing technology and developing value-added products from tilapia is therefore necessary to increase economic returns from tilapia production.
Tilapia Longganisa
Ingredients:
1 kilo tilapia fillet
8 tbsp. brown sugar
8 tbsp. soy sauce
1 tbsp. ground black pepper
Pig casing
1 tbsp. salt
Procedure:
1. Clean the fish, remove internal organs, gills, scales etc.
2. Behead the fish.
3. Wash thoroughly.
4. Fillet the fish
5. Pass into grinder and mix all ingredients.
6. Stuff manually, was and drain.
7. Pack using vacuum machine.
8. It can be stored for 3-4 months when frozen.
Tilapia Nuggets
Ingredients:
3 cups minced tilapia fish
1 1 /2 cups white onion (chopped)
6 tbsp. breadcrumbs
1 tbsp. salt
2 tbsp. garlic (finely chopped)
1/3 cup wheat flour
2 tsp white sugar
1 tbsp. cooking oil
1 cup shrimp meat
Breadcrumbs for coating
Procedure:
1. Mix minced tilapia fish meat and salt
2. Add the rest of the ingredients until sticky
3. Mold or form into desired size.
4. Dip nugget in a cool commercially prepared batter mix
5. Roll with breadcrumbs.
6. Pack and keep frozen.
Tilapia Tocino
Ingredients:
1 kg Tilapia fillet
1 tbsp ground black pepper
1 clove crushed garlic
1 cup brown sugar
1 cup soy sauce
Procedure:
1. Cut the filleted fish into halves.
2. Mix the brown sugar, and soy sauce together to dissolve.
3. Pour the mixture over the tilapia fillet.
4. Soak for 6 hours. Drain.
5. Sun/air-dry until dry to touch.
6. Pack in a polyethylene bag.
7. It can be stored for 3-4 months when frozen.
Tilapia Rolls
Ingredients:
1 kg Tilapia sticks
1 cup soy sauce
1 cup brown sugar
1/8 cup calamansi juice
1 clove garlic
1 tbsp. black pepper
100 pcs. lumpia wrapper
Procedure:
1. Prepare the marinating solution by mixing sugar and soy sauce.
2. Stir until sugar is dissolved.
3. Mix all other ingredients and soak the fish for 1 hour.
4. Drain, wrap in lumpia wrapper and pack.
5. Keep frozen.
